Masago Caviar

Masago is a Japanese word that refers to the roe of capelin, a small fish that is found in the North Atlantic and North Pacific oceans. The eggs are small and crunchy, and have a slightly sweet and salty taste. Masago is often used as a garnish in sushi dishes, and is also a popular ingredient in spicy tuna rolls, where it adds a textural contrast to the soft, creamy tuna.
