INGREDIENTS
  • 1 Avocado
  • 2 Small eggs
  • Salt & pepper (to season.)
  • 1/4 Red onion (finely chopped)
  • 300 g Ripe chopped cherry tomatoes
  • 1 Juice of 1 lime
  • Extra virgin olive oil
  • A few sprigs coriander
  • Jar of Elsinore Salmon Caviar
Instructions
  1. Halve and destone the avocado.

    Trim a little bit from the base of each half so they sit flat on a baking tray.

  2. Crack the eggs into the avocado halves, season and drizzle with a little olive oil.

  3. Cover with tinfoil and bake for around 20 minutes at 200c or 180 fan

  4. Meanwhile, mix together the finely chopped onion, tomatoes and coriander
    Stir in the lime juice and a good drizzle of extra virgin olive oil and season to taste.

  5. Once the eggs are baked, transfer the avocados to serving plates.
  6. Spoon over the salsa,
    Add a generous spoonful of Salmon Caviar
    Sprinkle with coriander.

  7. Enjoy!
