Did you know you can use Elsinore Clam Chowder Soup as the perfect base to create a hearty fish pie? 🥧🦐 Here’s how to make your favourite weeknight dinner in no time! 🙌
Ingredients:
1 tin Elsinore Clam Chowder Soup
2 tsp cornstarch with 2 tbsp water, mixed into a slurry
100g cod, cut into chunks
100g prawns
100g peas
Small handful of parsley, chopped
50g breadcrumbs
25g grated parmesan
Mashed potato
Broccoli/veg of choice to serve
1/2 lemon, wedged to serve
Method:
1. Heat the soup in a saucepan with the cornstarch slurry until bubbling and thickened
2. Add the cod and prawns to a pie dish, pour over the soup and cover evenly with the peas
3. Create your mashed potato and layer on top of the pie filling
4. Mix the breadcrumbs and parmesan together and sprinkle over the pie
5. Cook at 180C for 25-30 minutes, until the top is golden and crisp
6. Serve with broccoli or other vegetables of choice
7. Enjoy!
